While there are a number of dinner recipes you could cook, a few you must include in your menu would be the Camembert with truffle cream, filet mignon with mushroom wine sauce, Garlic and Thyme roasted asparagus and Banana Foster.
Camembert with Truffle Cream
This is a light creamy appetizer that you can serve with bread or fruit.
You will need some minced Shallots, 1 tsp. each of butter, and white truffle oil, 1 C. cream, chopped fresh chives, 4 oz. camembert and salt and pepper.
Cook Shallots in saucepan in butter until soft. Add cream. Simmer till it becomes 2/3 cup. Turn off heat and stir with truffle oil. Pour chives after adding pepper and salt. Pour the hot sauce over and around cut camembert cheese. Serve with fruits, bread and nuts.
Filet Mignon with Mushroom-Wine Sauce
This is the perfect romantic meal for two. This meal is light and best when served with mashed potato.
You will need around 3 tbsp. each of divided butter and minced shallots, ¼ C clean stem-less shiitake mushrooms, ¾ C. divided red wine, 5 fl. oz. consommé beef, black pepper, 2 filet mignon steaks, 1 tsp. each of dried thyme and cornstarch and some soy sauce.
Sauté the mushrooms and shallots with butter in a pan for 4 minutes. Add half a cup red wine and 3 oz. consommé. Simmer for five minutes while stirring. Separate mushrooms from sauce and set aside.
Boil the wine mixture on high heat till it becomes 1/4th cup. Combine mushrooms and sauce in one bowl and soy sauce and cornstarch in another. Sprinkle filets and pepper. Sauté the steaks with butter with three minutes on each side. Cook till desired doneness on low heat.
Add the remaining wine and consommé to skillet, while scraping pan. Bring to boil while stirring.
Arrange steaks on plate and decorate with sauce. Garnish with thyme.
Banana Foster
You need butter, brown sugar, cinnamon, 4 bananas, vanilla ice-cream, dark rum and banana liqueur.
Cut bananas into four pieces and keep aside. Combine butter, cinnamon, brown sugar and heat. Add bananas once sugar dissolves. Sauté, while stirring, till bananas turn golden brown. Pour dark rum and liqueur and heat for one minute. Tilt skillet and ignite liqueur and rum using long handled lighter. Serve with ice cream once flames subside. Pour in sauce for taste.
